I feel like I've learned about Gluten from reading this book. It's not just wheat, but so many other things. The first chapter details what gluten is and give some tips and tricks about how gluten may be disguised with other names. Chapters two through nine have fantastic and delicious recipes with pictures (my favorite part of any cooking book).
