Sabine Voïart was the daughter of Jacques-Philippe Voïart and his wife Jeanne-Amable Dubois. In 1816, she married Joseph Tastu, a publisher. As did many female writers of her time, she published her Romantic poetry under a male pseudonym, Amable Tastu. Sainte-Beuve considered Amable Tastu one of the greatest French poets, alongside Marceline Desbordes-Valmore and Louise Labé.
Amable Tastu also wrote librettos for musicians such as Camille Saint-Saëns.
