click on "Your books" on the top toolbar (or click on a tag or something) and do a search to get all the books/media that you want to move to another collection. Click the lightening bolt/power edit button on that page. It will let you change the collection for all those books.

If you're wanting to do one at a time, from "Your books", on the far right, there's a set of icons, the middle one is a file folder, use it to edit collections.
