About meI am the mother of 6 beautiful children (3 of my own & 3 step) from the ages of 7 to 17. I am finishing up my Bachelor's Degree at Beloit College in Women's and Gender Studies and History. I love to read and one day after the kids all grow up and move on I would like to turn one of the spare rooms into my private library. L.M. Montgomery is probebly my longest standing favorite author. I discovered Anne very young and have been a kindred spirit ever since. Reading is my favorite past time, though I only get to read my "for fun" books during the summer and winter breaks, because school keeps me too busy with other reading. I quickly lose track of time while in a bookstore and very rarely do I leave one empty handed.

About my libraryMy library is quite varied because of school, although many of the books have some type of connection to each other. I have a very close relationship with my books in fact I can name almost every book in my library off the top of my head.

You're welcome! I hope you like it. My brother had people sampling it today and everyone was surprised that they liked it. I think people hear "fudge" and think chocolate and then think pumpkin chocolate. But it's really like bite-sized pumpkin pie.
I'm messaging this to you so you can find it easier if you decide you want to make it. I really like it though I didn't think I would. It's kind of like pumpkin pie as finger food. The original directions had all white chips, no butterscotch, but I really like the butterscotch to ease the white chocolate flavor because I'm not a huge fan of white chocolate. The butterscotch chips were a good compliment to the pumpkin flavor. The original also had only cinnamon but adding the other spices makes it more like pumpkin pie. If you make it, I'd love to hear how yours turns out!

Pumpkin Fudge
2 tablespoons butter
2 1/2 cups white sugar
2/3 cup evaporated milk
3/4 cup white chocolate chips
1/4 c butterscotch chips
7 ounces marshmallow creme
3/4 cup canned pumpkin
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/4 teaspoon allspice
couple shakes nutmeg
1 teaspoon vanilla extract

Line a 9x9 inch pan with aluminum foil, and set aside.

In a 3 quart saucepan, heat milk and sugar over medium heat. Bring to a boil, stirring occasionally with a wooden spoon.

Mix in pumpkin puree and cinnamon; bring back to a boil. Stir in marshmallow creme and butter. Bring to a rolling boil. Cook, stirring occasionally, for 18 minutes.

Remove from heat, and add white chocolate chips and vanilla. Stir until creamy and all chips are melted. Pour into prepared pan. Cool, remove from pan, and cut into squares. Store in a cool, dry place.
