You are correct - due to the multiple translations of W&P, we decided to read the entirety of Part 1, so we are stopping this month at Part Two, Section 1.

We are doing a group read of 'War and Peace' for the 75 book challenge if you are interested in joining in with us. We are taking it in ~100 page chunks every month. The first part of the book we started reading on January 15, and it is not due to be finished until February 15, at which point we will bite off a new chunk that will not be due until March 15. I think you would have a good time reading it through this year, if you want to join!

I do not know for sure if such a thing is out yet or not, but I know a lot of the 'classic' books are being reissued in graphic novel form. I read one of 'The Red Badge of Courage' recently, and while I know that it would certainly not be the same thing as him reading 'War and Peace' it might be enough to keep him satisfied for now.
Both of my daughters loved those Magic Tree House books as they were growing up. They are probably more appealing to an 8-yo than any version of 'War and Peace'!
