Read yours on Hamelman's "Bread." You say you've been to class at KAF. So tell me: Is King Arthur flour really better than, say, Gold Medal or Pillsbury? And if so, why is that?

Hi, Brenda - Just notice you were one of only a few who own TALES ABOUT TIMOTHY, a book my mom got me when I was only a few years old, and I still have it. I know McLean, as I worked for Uncle Sam for 29 years and lived in Odenton, MD. Now I'm back in my MI hometown, retired and writing. Best wishes from "another Timothy" - well, Tim, actually.
