So this is probably a little vague, but I remember a book series I read when I was younger that featured a male protagonist that as a kid was taught magic, at one point he meets a hunchback who is injured and tries to heal him but turns him into a falcon.

As the series goes on he has kids and they all seek out guardians, I think there are 12 guardians in total?

I remember the cover was white with an orange or blue circle (I think it changed through the series) and black silhouettes?

Fingers crossed someone can help me with this because it's really bugging me!

Sounds like the Trinity Trilogy by Fiona McIntosh. The first book is Betrayal, this cover matches your description as well
