Who has experience with creating digital collections for websites? What are your opinions?

Can you clarify? I've got loads of opinions, but whether or not they're useful will depend on what your end goal is!

Is this more of an exhibit/showcase or presenting an entire (contextual) collection online? For the former I have used a variety of tools, from manual HTML to web albums. For complete collections, we have a full system with the likes of CONTENTdm, which requires meticulous planning and preparation (but which is a fairly powerful tool in the end).
