I have heard "coconut flour" bandied about, but hadn't really known about it until recently. Hearing about it made me want to find out more. When I had the opportunity to read this book, Coconut Flour Recipes by Valerie Alston, I jumped at the chance. Now I'm very glad I did!

This book was a quick read and very informative. The recipes look great, but now I have to stock up on my supplies, including of course, coconut flour. I look forward to making most of the recipes in this book and I really appreciate the tips the author kindly incorporated into it. When making new recipes with an unfamiliar ingredient, I can use all the help I can get. Thank you! I know a lot of the world is trying to be more health conscious and I must say I really appreciate an author who helps us out in that respect by introducing new information to us. I highly recommend this book to all the health conscious cooks out there! Oh heck, to ALL the cooks out there! 5 Stars

Coconut flour is simply flour made from coconut meat instead of wheat and grains like other flours. As its name implies, it is coconut meat that's now in a very refined powder form. In other words, this is the coconut meat itself that has been dried out and ground a bit after removing the coconut milk. There are several reasons why this flour is popularly used nowadays. One, it is a very healthy flour. It is healthy because it is a hundred percent gluten-free unlike most flours out there. This proves to be beneficial for those who cannot tolerate gluten in their bodies as well as in preventing celiac disease from attacking. Two, it is a flour that's very high in fiber which makes it flour that can aid digestion, lower blood cholesterol levels since this flour is low in saturated fats, as well as prevent diabetes by lowering blood sugar levels since fiber can also lower absorption and concentration of sugar in the blood.… (more)
