Excellent! Great advice on cooking ahead and storing, lots of gluten-free options, often the cheese is added at the end (so easily omitted if necessary). Most important, it's delicious, nutritious and thrifty. My copy is getting stained. ( )

I love this book for its delicious breakfast recipes. I needed some new ideas. I especially liked the two step method to cut down on cooking time for busy mornings. But that is just the start!

Maria Speck has given us wonderfully complete introductions to each of the grains. Letting us know about the texture, flavor and nutritional pluses of every one. She includes a cooking table for a quick look at grain to liquid ratios and ideal cooking methods. Her recipes are delicious and the fine points after each recipe offer gluten free and vegetarian options as well as variations of the dish. At the end there are listings of sources for these more unusual grains. Simply Ancient Grains is beautifully illustrated which inspires me to get into the kitchen and try something new.
