( )This is a useful book for the sorta vegetarian. I have no hard evidence for this, but I suspect many people fall into the category of thinking that they ought not to eat as much meat, particuarly red meat, but who also are not obsessed with the issue. This book offers many recipes with alternatives to red meat - using chicken or fish, or even simply vegetarian solutions. The recipes probably are not culinary award winning; but they work and aren't terribly difficult or expensive. I bought this book hoping that it would help me implement a more "vegetable-friendly" diet. Although some of the recipies sounded good, it would have helped if there were pictures to help me visualize the final result. I really like this book. My only quarrel with it is that it does not have any pictures, and pictures are largely how I decide what I want to eat! (I’m very 5-years-old-at-Denny’s in that way). But the Vegetable Terrines in particular are delicious, and it is very complete- it supplies a decent amount of explanation even on how to prepare items and techniques, and common substitution pitfalls.
