This may be an OK book, but when I checked the recipe given in this book or Crab Imperial with the one in the Commander's Palace Cookbook (Clarkson-Potter, 1984) it is not the same at all. The recipe for Crabmeat Yvonne differs also from the one in Galatoire's Cookbook. The recipes in the restaurant cookbooks seem a touch more complicated. Maybe that doesn't matter.
