To call Mexican food time consuming to produce is an understatement. It can be down-right laborious, which often relegates it to weekend cooking. In Mexican Everyday, Rick Bayless has captured the essence of Mexican flavors in easily prepared recipes that don't take oodles of time to produce while maintaining the integrity of the Mexican flavor profiles. That is no small accomplishment. He has made good tasting, easy to prepare, delightfully tasty Mexican food a viable option for weeknight meals. ( )
