This booklet, prepared by the Human Nutrition Research Branch of the USDA Agricultural Research Service, shows how to best prepare and cook different less tender cuts of meats, including using meat trimmings. Black and white photos throughout show how to braise, stew, and pot roast tough pieces of steaks and roasts. It also goes in to ground meats, and using up leftovers & processed meats. The back of the book even shows how to prepare organ meats (liver, brains, heart, kidneys, lungs, tongue, sweetbreads, spleen, tripe).
