Learning Cocoa with Objective-C, 2nd Edition by James Duncan Davidson
This is an excellent primer on the Cocoa API in Mac OS X and on Objective-C in general. I would recommend it to anyone looking for a starting point for writing native applications for Mac OS X. Some prior programming experience with basic C (not necessarily C++) is helpful, but not required.
