Against all rational prediction, '''Desserts by Pierre Herme''... manages to translate the work of France's most celebrated pastry chef onto the printed page and make it accessible to home cooks of only average ability...The instructions in the book are a model of clarity and precision, and when [Dorie] Greenspan asserts in her introduction that ''none of the recipes is beyond the capabilities of an average home baker,'' she means it.
