Can anyone recommend novels and short stories about the guys like William Walker who went into South and Central America in the 19th century and tried to take over countries?

A couple of the books in the Aubrey Maturin series (The wine-dark sea, Blue at the mizzen) by Patrick O'Brian are about British naval involvement in the Chilean war of independence.
