First published in 1984 this excellent book is on the far side of the Great Olive Oil Watershed. Butter and cream galore, with olive oil largely confined to vinaigrettes and eggplant dishes. Each vegetable has its own section, recipes preceded by an entertaining, usually autobiographical, introduction. This is the Australain edition with helpful notes about terminology and substitute ingredients.
This is my go-to book for new ideas on cooking veggies and grains. While most recipes do contain liberal lashings of fat and dairy, it is still a most fabulous resource. It is an omnibus copy of two cookbooks by Burt Greene, and my only issue is that the index of the second was not formatted to cover the new page numbers. It gives you information about the ingredient, a funny story from the author's own life, and wonderful recipes!
Includes a 5 page portrait of M.F.K. Fisher titled "America's Finest Food Writer - M.F.K. Fisher. An Intimate Portrait By Bert Greene". Illustrated with color photo of Fisher. pp. 28-35. The text of the article was reprinted in Conversations with M.F.K. Fisher, ed. by David Lazar.
