Author Urvashi Pitre writes so winsomely that I sometimes forgot that what I was reading was a cookbook, not a memoir. She’s someone I really wish I knew in real life. Pitre gives readers the most accessible explanation of keto dieting that I’ve ever seen, and she reassures her followers — both in this book and on her blog — about setbacks and plateaus.
Pitre’s cookbook is as billed: yummy desserts and snacks of all descriptions that fit within a ketogenic diet. As a further plus, show more she doesn’t include the usual raft of weird and difficult-to-find ingredients that so often characterize keto cooking. Guar gum, almond flour and coconut flour are as weird as it gets. Good news! I devoured — pardon the pun — this slender cookbook in one sitting, and I plan to use plenty of the recipes this summer. show less

This could have been a fabulous book--it seemed to start out that way until I kept tripping over typos and mistakes. At only 1/3 of the way into reading through it, I got to the Gyros recipe where the directions said to mix the PORK with the onions, and the ingredients only listed LAMB. I threw in the towel. I couldn't trust any of the recipes -- who could tell if there were less obvious screw-ups (until you tried and discovered it tasted awful)?
I usually love Urvashi Pitre’s cookbooks. She makes keeping keto easy and delicious; however, this cookbook doesn’t provide nutritional information, but it seems to not hew to the usual low-carb limitations: recipes boast all-purpose flour, potatoes, even frozen puff pastry — all big no-no’s on a ketogenic diet!
So, caveat emptor. If you’re new to the air fryer, and you’d like some healthy recipes, Every Day Easy Air Fryer is a five-star cookbook for you. If you’ve been show more following Pitre for her excellent ketogenic cookery, there’s still something for you, but don’t get your hopes up to0 high. show less

Instant Pot Miracle Vegetarian Cookbook: More than 100 Easy Meatless Meals for Your Favorite Kitchen Device by Urvashi Pitre
Instant Pot Miracle Vegetarian Cookbook from Urvashi Pitre is a wonderful addition to any Instant Pot user's library, well, kitchen. I have one other book by Pitre (Instant Pot Fast & Easy) and this new one is every bit as good. Also, if you're looking at cookbooks online, beware of rip-offs. I got my hands on 3 books that were not Instant Pot specific (though the title claimed it was) but was just a generic collection of recipes scanned and sold on websites that allow this (yes, MAJOR show more websites). If you want to be sure, check to see if it is "Authorized by Instant Pot." In addition, if it looks legit but isn't officially authorized, I would make sure it is published by a reputable publishing house, that should help and at least you'll have an avenue of recourse should it be a fake. Anyway...
Over the weekend we tried two of the recipes and they were delicious. Others in the book will likely join our regular cycle as well. We use our Instant Pot probably for 2-4 meals a week, and our air fryer for 1-3, so books that are specific to these appliances really help with keeping the process simple. Pitre has wonderful tips, specific Instant Pot steps, and great pictures. There aren't a lot, if any, in process pictures, but particularly with an Instant Pot I'm not sure they would be particularly helpful.
When I am able to get my hands on a physical copy it will join my other cookbooks on my shelves. I definitely recommend this to Instant Pot users, both novice and experienced.
