Every recipe I've tried in this book is good. Every. One. I particularly like the Pineapple with Crushed Mustard Seeds (warning: hot!); the vegetable sambar; and the vindaloo, which I make with dark meat chicken instead of lamb. This was my first Indian cookbook, and it's still my favorite.
