Great book. Designed like a classic book on the smoking of meat. Reviews of products, fuels, etc. are there, but the real prize are the recipes. While there are the classics, there are different recipes that I have cooked (eg: meatloaf) that have turned out fantastic! Worth the read. 3.5 stars.

Very, very, very basic. The book is good because it has lots of recipes and if you have NEVER smoked meat and this is your first time, this is a good basic book.
LOW AND SLOWthat's pitmaster Jeff Phillips's motto for creating succulent smoked meat. This book, from the creator of the world's highest-ranking website on smoking meat, shows you how to master the low-and-slow art.

For Jeff, smoking meat is a passion and an adventure to be shared. Smoking Meat guides you step by step through the basics (and finer points!) of “smokeology”—how to choose, set up, and modify a smoker (whether charcoal, gas, or electric), which wood to use, how to build show more and maintain a fire, what tools and equipment to buy, and how to stock a smoking-meat pantry and keep food safe.

Smoking Meat also includes a wide range of appealing recipes for:
• barbecue favorites such as chicken, ribs, and brisket
• sauces, rubs, and brines that kick up the flavor of the meat
• specialty dishes such as duck, meatloaf, fatties—even frog legs
• sides, cheeses, and desserts

With this complete guide, you'll no longer have to go to a store to buy great smoked meat; you'll be able to create it yourself in your own backyard.

JEFF PHILLIPS is the creator of the smokin' hot website smoking-meat.com. With more than 300 pages of recipes and tutorials, 34,000 forum members, and 140,000 subscribers to its monthly e-newsletter, smoking-meat.com is the highest-ranking website on smoking meat in the world.

Born in North Carolina and raised on southern cooking, Jeff started practicing the art of smoking while still a teenager. He lives in Sapulpa, Oklahoma, on a 10-acre farm with his wife and three children.
