A really great reference book of classical pastry, with professional terms for the professional 'hotel and catering' trades. It is interesting to note that the front cover of the book has / Richards' / with the apostrophe at the end (his name is Richards) and on the title page, it is spelled / Richard's / with the apostrophe before the final s. The price list at the end is very interesting also - 1 quart of lobster salad costed $2.50, vanilla ice cream was 60 cents a quart, and champagne show more punch frappe was $5.00 a gallon. show less
