I was really intrigued by this book and wanted to read it even though I've never been a huge fan of fried foods and have like them less in recent years. And there is no way I could afford to buy an air fryer nor do I have room for it.
I still like onion rings though I'm fine with baked ones and I'm no longer a huge fan of french fries. And of course things I liked when I was a child such as fried chickens and fried fishes really have no appeal for me but I knew that this was the all vegan show more book and I eagerly waited for it from the library.

And then there's a resources section and I appreciated that Virginia Messina wrote a short section about using oils. That section also has the acknowledgements, the index, and a metric conversion table.
I enjoy JL's books and writings. She's personable, has a good sense of humor, and writes clearly and in an interesting manner. In this book she gives lots of really great tips and helpful information.
Even though I didn't think this book would be my favorite regarding the recipes there were several things that look particularly good to me. In order of appearance vs. my level of interest here are the ones that make me want to own the book and an air fryer: spinach omelette, vegetable egg rolls, seasoned french fries, fried avocado, fried tofu with peanut sauce, breaded mushrooms, parsnip fries, roasted acorn squash, onion rings, maple butternut squash, eggplant Parmesan, mixed vegetable fritters, cheesy potato wedges, Hasselback potatoes, Poutine, mushroom white bean gravy, kale and potato nuggets, personal pizzas, corn dogs, roasted chick peas and broccoli, fruit crumble, fruit cobbler for one, fruit pastry pockets, roasted cherries Jubilee, baked apples, caramelized fruit and nut topping, fried Ginger-Os, chunky applesauce, shortbread cake. So more than several, but they're not representative of the variety of recipes in the cookbook because they reflect my personal tastes.
I highly recommend the book for vegans, vegetarians, and omnivores who enjoy the taste of fried foods and foods such as meats and cheeses.
And there are vegan air frying groups on Facebook!
I'm sad that the book has to go back to the library on Wednesday. I might borrow it again. show less

I am not a vegan per se but I could eat some vegan recipes and really enjoy them. Fast and East Vegan Cookbook by JL Fields is a cookbook that would be one I would use. It has 100 tasty recipes that are fast, easy or both to prepare. They also have dietary options so you can adapt any recipe to fit your dietary needs.
Coconut Curry Soup, Spicy Pinto Bean Skillet or Mushroom Stroganoff Bake and so many more. Chapters include No Cooking Required, Thirty-Minute Meals (or less), Five show more Ingredients, One-Pot Wonders, Bake It Right: Sheet Pan & Casserole Dinners, No Pressure Pressure Cooking, plus my favorite chapter Kitchen Staples where you will learn how to make Vegetable Broth, Oat Milk, Tzatziki and Cashew Dressing.
What is really helpful is a graph at the end of the book letting the cook know if the recipe is Gluten Free, Nut Free, Oil-Free or Soy Free. Recipes are easy to read and follow and most ingredients can be found at the local grocery store.
I think that this is a cookbook that will inspire the vegan/non-vegan cook to want to branch out and make these recipes. I love it! show less

With the rise in popularity of instant pot and pressure cooking in general, it was about time for a good beginner's vegan pressure cooking cookbook.
The book begins with a lot of information to help home chefs become comfortable with the idea of pressure cooking. Over a dozen pressure cooking questions are answered clearly and thoroughly. The information is really useful, and makes the book quite beginner-friendly.
The short table of how long it takes to cook specific grains and beans is very show more impressive, and convinces the reader to use their pressure cookers more often. One minute for quinoa? Eight minutes for brown lentils? I have cooked brown lentils for hours to get them to the correct lentils. Having them finished in eight minutes makes me want to permanently install a pressure cooker on the counter top! There is a longer, more comprehensive cooking time and amount table of grains, beans and vegetables just before the recipes section.
