Maybe one day I will seriously consult this book. For now, though, I have trouble with the basic premise of this book - that French cooking is unhealthy. That would mean that the French have been consuming unhealthy food for generations and generations... Somehow, and especially after evaluating the many health differences between the French and their American counterparts, I find that extremely hard to believe. Plus, paranoia should not be allowed to tamper with the beauty of French cuisine.
