Before Becoming King:

Lion in Winter by James Goldman - dramatic presentation of Henry II (Richard's father) and his family. Includes an intense confrontation between Henry and Richard.

The Crusades:

The Talisman by Sir Walter Scott. Richard and Saladin duke it out in the desert.

After the Crusades:

Troubadour's Song by David Boyle. History book about Richard's captivity and ransom after the Crusades
A Search for the King by Gore Vidal. A historical adventure about Richard's troubadours search for him while he's in captivity
The Lute Player by Norah Lofts - a historical romance about Richard's trobadour and other members of the royal household
My Lord Brother the Lionheart by Molly Costain Haycraft.
In which Joanna Plantagenet and her future husband take the Blondel role...
Ivanhoe by Sir Walter Scott. Richard appears briefly at the end to win the day.
The Merry Adventures of Robin Hood by Howard Pyle. Again Richard appears at the end to fix all the wrongs that have been done in his absence.
