I was wondering if anyone could recommend a good illustrated history with pictures, diagrams, maps, etc.

There is a History of the IRA by Tim Pat Coogan. I don't know if it would suit your requirements, or if it's any good, as I haven't read it.
There are reviews on Librarything.
