I've enjoyed Samarkand by Caroline Eden. It's a bit more of a coffee-table book than I usually go for but the proportion of recipes to pretty pictures is high enough and it covers an area I know little about - essentially, the central Asian republics of the former Soviet Union. I've tried four or five recipes with good results, and particularly recommend the lentil and apricot soups.
