Were you surprised how quickly Captain Tao Caved? Do you think he was genuine in this?

No, I wasn't surprised. He wasn't part of the group responsible for whatever is about to take place, he has simply been employed as an errand boy, transporting things from one place to another.
I believed his fear of being thrown to the sharks was genuine - neither he nor his men had put up much of a fight against Cabrillo's attack.

Yes, I did think that he was genuine in his giving up to Juan. He was being used by the Torkan twins. I think he and his crew would have been killed as soon as he was no longer needed. Juan on the other hand... other than threatening to throw him to the sharks...never indicated that he would kill him. He was willing to fall in with anyone that was going to keep him alive. You could tell that the promise of money was the only reason he was in the game to begin with.

He's not one of the masterminds - he was just transporting the materials so I didn't expect him to hold out for long

He was basically a highly rewarded employee who didn't want to give up his life.

Just in I for the money, so not a great surprise that Tao Caves so quickly, and do think he was genuine in this.
