We are establishing a new digital catalog and want the students in our youth program to be able to use their phones to enter the ISBN or scan the barcode to enter books into the main catalog. How do we invite/give permission to others to contribute to the central catalog? (vs each student making their own independent and un-shared collection)

First, of course, make sure that the students are all at least 13. "all children under 13 are prohibited from using LibraryThing".
Then, if you give the students the member name and password, they can add books, change data in your account, post in talk with your user name... You cannot limit them just to adding books. If they have the password they can do anything. You need to really think about whether or not that is a good idea.
