Do you mean pixie sticks?

Nevermind! I see your new post.

I went to Starbucks for breakfast. I almost tried an apple fritter but decided to another day. I've never had one. I ordered a grande peppermint hot chocolate without whip cream and a toasted bagel with cream cheese.

Oh, K, you should get an apple fritter from somewhere sometime! We have a donut shop in town that makes the most amazing apple fritters. They're the size of a dinner plate and they always have the perfect, very slight crunch outside with a soft and wonderful inside. Mmmm... I might have to get one tomorrow.

:D Yes, I do. I was just teasing. Mixing peanut butter in chicken noodle soup must be hard to do.

20lefty33
Feb 2, 2009, 2:09 pm

You'd have to let the peanut butter melt to mix it properly. The sandwich form is certainly preferable.

I had rigatoni with a little butter on it. I was going to put sauce on it until I remembered I was making baked spaghetti for dinner and decided not to have the same thing twice!

55elbakerone
Feb 3, 2009, 12:58 pm

you guys are making me really hungry....

Especially #44 - those breadsticks look awesome lefty! Got a recipe to share?

I'm heading to lunch soon - I'll be having a turkey and spinach sandwich, which may sound odd if you don't like spinach, but I really really like it!!

56lefty33
Feb 3, 2009, 1:25 pm

Ejj, did you use normal milk, or sour the milk with lemon juice, or use the powder buttermilk? Just curious what version of "fake" buttermilk was yielding less-than-perfect results.

Sure, El! I'll post it when I get home tonight. Are you using the spinach in your sandwich in place of lettuce? That doesn't seem so bad, if it's fresh spinach.

57ejj1955
Feb 3, 2009, 2:03 pm

I used regular milk that I soured with vinegar (googled how to do this--I love having the source of all knowledge right at my fingertips). The first time I made these hoe cakes (Paula Deen's recipe) they were really good, but I used real buttermilk that time. It does make a difference, I have to say, though even the inferior version is still edible.

I'd also love the recipe--any combination of bread and cheese is bound to make me happy!

I had waffles for dinner while baking some peppers. They're my sister's for her lunch tomorrow. I had to put them in bags for her afterward and didn't expect them to feel that way. I thought they'd be mussy mushy. My grandmother says they're delicious but she also says she has them with meat inside.

66jugglingpaynes
Feb 3, 2009, 11:27 pm

Hang on K, I'm having some pronoun trouble. Or else I missed a sentence somewhere. You had waffles, but the peppers were for your sister's lunch? And which was mussy?

67Kerian
Feb 3, 2009, 11:30 pm

KIK! I thought the peppers were supposed to be mushy (sorry, I spelled it wrong before) after they were cooked, but they weren't. As for the waffles, non-mushy is prefered. ;)

68ejj1955
Feb 4, 2009, 12:15 am

They will get mushy, or at least very soft, if cooked long enough, but it takes quite a while. I like stuffed peppers myself; I usually stuff them with rice and hamburger, some kind of tomato sauce on top, but the possibilities are endless and you could do a vegetarian version easily.

Here is the recipe I use for cheese-filled breadsticks. It is a yeast bread, so it takes about two and a half hours to get them on the table because of rising time.

Cheesy Breadsticks
1-1/4 c water (~120*F)
4 tsp butter or margarine, cubed (that's 1 tsp more than 1 Tbsp)
2 tsp sugar
1-1/2 tsp salt
4 c flour (either bread flour or all-purpose is fine)
2-1/2 tsp active dry yeast (a packet is 2-1/4 tsp, which is close enough)
Package string cheese sticks, containing about 12 sticks

Garlic Butter
1/4 c butter
3 Tbsp olive oil
2-3 cloves minced garlic, or 1/2 tsp garlic powder
2 Tbsp grated Parmesan
Thyme, oregano, basil, and parsley to taste (I use about 1/2 tsp of each), or about 2 tsp Italian seasoning

In a large mixing bowl, add water, butter, sugar, and salt. Stir. The butter will soften but probably not melt completely -- that's okay. Add the flour; measure out the yeast on top of the flour. Mix until a dough forms, and then knead for several minutes, until dough becomes smooth and elastic. It should be slightly sticky to the touch. If it is too dry, add additional water 1 Tbsp at a time. If it is too wet, add additional flour 1 Tbsp at a time. Cover with a damp cloth and let rise in a warm place for about an hour or until doubled in bulk.

When rising is complete, punch dough down. Separate into 10-15 equal segments (they will be about 2-3 inches in diameter). Stretch segments to be slightly longer than a cheese stick. Put one cheese stick in each segment, wrapping the dough around the cheese and rolling the dough thoroughly to close the seam. Use a few drops of water if the dough won't join well. Cover and let rise for 30-60 minutes, until breadsticks reach desired size (you can cheat on this rise if you're in a hurry).

Meanwhile, melt butter in a small saucepan. Add oil, garlic, Parmesan, and other seasonings. When breadsticks finish rising, brush with garlic butter and bake about 25 minutes at 375*, until bread starts to brown or cheese seeps through. Remove from oven and brush lightly with garlic butter. Serve warm.

First coffee; probably need more in a minute.

Omelet with onions, spinach, cheese. Not my usual but quite good. Plus toast from the good "peasant" bread from Price Chopper.

As for what we're eating, today Espy and I are off the diet, so we are eating whatever we want! I think we're going out for Mexican food this evening.

I've just butchered a cinnamon and raisin bagel. There were thirty-one raisins inside. I toss them all out now. There is such a thing as too many. It's like with blue berry muffins. Some blueberries are good, but they just ruin the muffins by having too many blueberries. It makes it gross.

#174 - Fish pie. Mmmmmm.... An idea which may sound utterly hideous to you, but does work, is that when my mum makes fish pie, she puts chopped up hardboiled egg in as well. I use cod or haddock, but always like to put prawns in. I always use dill with fish. I tend not to use recipes very much, even though I love to own cookery books. I just experiment with flavours I like, and use the cook books for advice.

183biblioholic29
Feb 26, 2009, 8:45 am

Mmmmm....I may try the eggs next time...and dill sounds good too. I ended up looking up fish pies on line, reading a recipe so I got a basic idea of what to do and then making up my own recipe. I did salmon with onion, peas and carrots, parsley and thyme. It was delicious and I'll definitely be adding it to my repertoire of quick and easy meals to prepare! I love that it gives me the opportunity to get a variety of veggies. Yum!

I was also thinking of trying it with mashed cauliflower instead of potato sometime, to up the veggies and nutritional value. What do you think?

My father eats it that way, too! There was actually some powdered sugar on them. :)

Does this mean JP has decided she posted as much as she can for this month and has to wait until next month? People were chaty in February! It's a shorter month than the rest. :)

We will miss JP as she is unable to say anything today, though I suspect cat may not be cat at all. I'm debating because I see cat's writing in #207 and yet wonder if JP is up to tricks. ;)

Don't blame me, I have no control over her.

215MrAndrew
Feb 28, 2009, 6:07 pm

cat, tell JP that she should use those posts now. She can always go back and delete some if she goes over, but she can't add posts once the month is over.

Tell her that another good idea is to start a thread like "JP says", and she can just add to the post everytime she has something to say. What we'll do is, everytime we read someone's post and then wonder what JP thinks of it, we'll go to the "JP says" thread and see her comments there.

It's no trouble, really.
