As far as sea stories told from an American viewpoint is concerned, these come to mind:
The Tall Ships by John Jennings
Lydia Bailey by Kenneth Roberts (a bit heavy on the romance, but excellent historical details about the Haitian revolution)
The Revolution at Sea saga by James L. Nelson (also all the nonfiction he's been writing lately)
