I recently came across Usborne How to Knit and although it's a book for children it's a pleasant surprise. It's full of quick and fairly simple projects for the beginner and amongst other things I've made myself a lovely flower brooch (using the flower and leaf patterns) that isn't at all childish looking. None of the projects use too much wool so it's good for small gifts/projects on a budget. A sample of what's inside can be found here:
