Discrete-Time Signal Processing (3rd Edition) (Prentice-Hall Signal Processing Series) by Alan V. Oppenheim
A classic. A staple. And I'm ashamed to admit, I found it rather a hard read. But that says more about me than the book. Recommended.
This is the absolute must-have signal processing book. While it doesn't cover statistical signal processing in much depth, all other aspects are well-covered. Combine with Brian Evans' Signal Processing package for Mathematica, and you're set.
This is the standard text book for the DSP course in many universities. But for deep knowledge of DSP, you also need a book to use with, for Mastering this field by programming and filter designing in MATLAB.
