It is clear that Rieder knows his classical Austrian cuisine. And I agree that Austrian tastes are changing and that new ingredients need to be experimented with. I just cannot think that his experiments are more than, "Let's shock the taste buds." This is most obvious in the fish chapter. In none of the recipes are you going to enjoy the flavour of the fish. OK, Austria is not known for its fish. He probably thinks his audience wants to hide the flavour of the fish. He may well be right.

Das Kochbuch über österreichische Küche kommt im schlichten dunklen Cover daher. Da könnte man leicht auf die Idee kommen: „Traditionell, aus der Kaiserzeit, nichts Besonderes“. Weit gefehlt. Traditionelle Rezepte wurde aufgepeppt und internationale Gerichte werden integriert. Schwierig wird es manchmal, wenn man die Zutaten nicht kennt. Aber dafür gibt es eine Übersetzungsliste im Anhang.
Eigentlich kann man das Buch erst wirklich beurteilen, wenn man alle Rezepte einmal show more durchprobiert hat. Doch das, was ich bisher ausprobiert habe, hat mich überzeugt. Es ist gut nach zu kochen und schmeckt vorzüglich. Auch gibt es immer wieder Tipps für Variationen und Tipps, damit das Ergebnis auch perfekt wird.
Die Fotos der Gerichte sind einfach toll. Die Seiten sind abwechslungsreich und ansprechend gestaltet.
Besonders gefallen hat mir, dass viele Rezepte auch für die vegetarische Küche geeignet sind.
