Versitile and impressive, with some interest cooking technique e.g. potato-wrapped fish. Recipes often extremely complex drawing on a number of subsidiary preparations. Good explanatory notes on each dish. Still stands up well against more contemporary chefbooks.
Wanted a basic knife book, giving guidance in knife purchases and use. This book accomplishes that with beautiful glossy photos. Shows how to filet fish, etc.
Expensive book, though. If you can get it on sale, it is a worthwhile addition to your cooking library.
