As I prepare to purchase a new BH&G cookbook, I write this small obit for my old one. It had around forty years of life. It is torn, the spine has separated and fallen apart, some pages are stuck together, others are smeared and smudged, and there are sticky notes on hundreds of pages. But it was a good cookbook. It was the best.

Because of Betty (and Joy of Cooking), there was no recipe that could challenge me. Following instructions is easy, but Betty showed me how to cook. She taught me show more when I could substitute ingredients and when I couldn't. Betty taught me how to do nearly all the cooking techniques without a hitch until I could intuit when they should be used for different ingredients. Sure, there are new ones now, but really, is there anything better than her old-fashioned chicken fried in good old Crisco? I'll never stop making that coleslaw recipe. Thanksgivings wouldn't be the same without her. However, I've never made a gelatin mold and that probably won't change.

Goodbye old Betty. Hello new Betty.

With a good selection of fast no fuss recipes, Better Homes and Gardens Vegetarian Cooking makes it easy to go veg. All the recipes utilize ingredients found in my local suburban grocery -- no faffing about after nutritional yeast flakes. The recipes are a combination of re-tooled (de-meated) old standards and many “adventurous” originals (enough to make this cookbook more interesting to me). Most of the dishes seem beginner friendly and the color photos are quite enticing (if I ever show more make “Squash Soup with Wheat Berries” it will be because of its accompanying photo).

In addition to marking all low-fat and no-fat dishes with a heart symbol, nutrition information is provided for every recipe and lots of tips regarding cooking techniques, ingredients, and accompaniments are scattered through this book. The index is very concise and the vegetable grilling table in the back is a nice extra.

I have made three fast low-fat recipes from this cookbook: "Confetti Barley Salad" (pg 32), "Tarragon Bean Salad" (pg 39), and "Orzo with Root Vegetables" (pg 71). Portion sizes for all three recipes were very generous and, while all tasted quite good from the start, leftovers did quite well in the fridge. It took me about a week to eat each dish and the flavors and textures of each were consistent regardless of the time elapsed -- the vegetables didn't get too squishy in the sauces and the sauces didn't become overpowering.

My favorite recipe was "Tarragon Bean Salad" -- I am not a great lover of legumes, but this was a dish I quite happily ate all week. The different textures of the beans combined with the crunch of vegetables gave the dish a nice mouth feel. The vinaigrette was very good, too, with just the right mix of sweet and sharp. I am partial to red onion so might use more (and less finely chopped) next time. That's the only change I would make -- this dish is pretty perfect and, as the book notes, "a whole lot more fun to eat than a bowl of oat bran!"

An effing classic. If you want your mom's or grandmother's cooking, find their book and don't let your sibling's grubby paws touch it. It'll never see the light of day again otherwise.

Besides being a valuable source of great recipes, it doubles as a sacred repository, precariously holding betwixt its leaves innumerable slips of news clippings which are the key to multiple generations worth of nostalgic BS and simultaneously serves as the secret in passing along core memories to your own show more younger family. I love old cookbooks, and this paperback cookbook from Better Homes and Gardens is one of my favorites, despite it only being from 1969. The kind of dishes you would find in recipe books from the thirties through the early seventies are probably the closest America ever came to having a unique cultural menu outside of fast food and TV diners, and the approach to meals as a form of entertaining hints at the communal society we never managed to embrace as the end of the millennium approached. show more But most of all, I love this cookbook because, like many of the older ones, it contains entire sections on MOLDS! Yes, the lost American art of suspending normally appetizing foods in a rigidly formed encasement of congealed gelatin, sometimes even referred to as salads for some unfathomable reason. The space-age cousin of the casserole, molds and salads were mainstream dinner table centerpieces in the good old days, a not-so-subtle mystery food that could contain anything from fruits or vegetables to hamburger, salmon, or tongue. You aren't a true American until you've bitten into a spoonful of meat-flavored gelatin, so grab yourself a copy of this Better Homes and Gardens cookbook and make a Better Home with Gelatin Molds!!!!! show less
