Read this when I was quite young, eight or nine, so in the early seventies. It was about two young women who rode horses in shows, traveling around the country. The main character was named Honey Jackson, and the horse she rode was white, and was called something other than it's name, which was Olympic. Fans woudl shout, "All the way, Olympic, all the way!" when she was riding. At the end, she buys Olympic from the owner.
I kind of think it was a Scholastic paperback, but it might not have been -- it was a paperback, though. No pictures. And I can't remember the title, or any semblance thereof.

I've never read the books by Patsey Gray, only heard of them online, but am pretty sure quite a few of hers are published in Scholastic. The paperback listed on abe.com says 'young readers press', so not sure about that one.
