A young couple decide they want to live on a tropical island
Start looking for government jobs
One of them gets hired on a VERY remote, isolated island (can't remember name)
They move there, live for 1-2 years
Deal with water shortage, water pollution, tropical storms, poor housing, local wild dogs, etc
Mostly humorous, non-fiction
Funny scene when they first arrive involves the guy going for a swim in the ocean, loving the pristine beauty, only to realize that the locals are using the beach as their communal toilet - and he's swimming in it
