I know I read this recently, and I'm blanking on the title - I need to reference it for a presentation.
The basic idea is that we can study how people react in emergencies, and use that to figure out how best to react in emergencies ourselves.
Examples I remember from the book include talking about how people don't flow like water when they're in hallways or stairwells,
a discussion of the company admin who saved his whole company from the towers on 9/11 (and died himself)
a busboy who led a whole bunch of rich diners to safety when the exclusive restaurant they were at burned to the ground. There was a wedding there also, and the bride also got her party to safety.

The Unthinkable? Haven't read it so I don't know how closely it matches the description, but it was the first book that came to mind.
