Fantasy: a white dragon with eyes like General Grievous on cover

It's a part of a fantasy series, probably done prior 2000.

The cover is of a white dragon in the background looking over its shoulder at a character (possibly more than one) in the foreground who's wearing winter fantasy attire. The scene is snowy in a forest. The dragon's eyes and face have a superficial similarity to General Grievous from Star Wars RotS.

Major Plot points
- The white dragon is a villain and cultivating something in a pit that sucks in energy. It's energy-draining radius grows as the story progresses. The dragon in love with the thing and obsesses over it.
In the final conflict the dragon gets to close to the construct and it sucks there life out of him.

-The main character is passively overshadowed by the ghost of his dead uncle and acts more like him as the story progresses. During the climax the MC has to die to stop the construct, but he survives because his uncle's ghost, which had planned this occurence, acted as a 'bonus life'. So the MC revives, sans the possessing influence.

- The king of the dragons travels with the MC. In human form, but had been previously been left brain dead and so his body is only moving on instinct. He shepherds a bunch of infant dragons.
He dies in the final conflict protecting the infants from the construct's life drain, managing to shift halfway ro his dragon form before succumbing and thus shielding the infants with his own bulk.

And that's all I can remember with any real clarity.
