This is definitely not The Dark Tower series by Stephen King.

Fiction

Probably published in the 60s/70s, could have been earlier. I read them in the late 90s from my library & they had the plain, faux leathery covers with just the title & author name imprinted in gilt.

Author last name, or main character last name, might have started with Th

It wasn't set in the Old West, but had an early 1900s, small townesque setting.

Main character is a male, sorta magician. There's a somewhat overarching antagonist I can't remember much about, but at least some of his henchmen were crow like. I remember one scene of MMC walking down a dirt road & finding a dead henchman who looked human in face & hands, but had feathers on his arms.

Only other specific scene I remember is the MMC & a few others trapped in a house with antagonists & a raging storm outside. One of the people in the house is an older witch who has kind of become good, or at least in this moment, and they draw a pentacle on a plate & the MMC smashes it on the roof as some sort of protection spell. One bit of dialogue has the witch talking about the number 5 being a number of power bc of the 5 points on the pentacle & five fingers on a hand.

I want to say there were at least 5 books in the series, could have been more.
