This is a really great idea. Free, fun, conversational, open, etc. All good.
The group code4{lib} does these lightning talks at its conferences. 5 minute talks on a topic of the speaker's choice. There were about 40 of these at the 2009 conference (a 3 day event.) This is just one idea for getting away from traditional events like panels that get more people engaged in presenting ideas.
Structures that bring the attendees into active engagement with each other on particular issues are a must. Otherwise the unconference will be a conference.
