Gorgeous, chocolate dessert cookbook. Dorie Greenspan certainly knows her desserts! Cookies, cake, truffles, pudding...There aren't as many pictures as I'd prefer but the precise instructions leave no room for failure. I worked my first show more job in a chocolate factory/bakery and know full well the mercurial temperament of chocolate and chocolatiering. A beautiful book with comprehensive instructions and lots of inspirational ideas for flavour combinations. A must have book for the serious baker with an appreciation for modern French patisserie.
Super bouquin: les classiques sont tous representés, et ma forêt noire était une réussite! Les techniques, ustensiles, sauces/crèmes de bases sont tous expliqués clairement. Les recettes vont de la plus facile à la plus difficile, et elles sont rangées par types de gâteaux. Ce livre est un classique de la cuisine Française et mérite de se retrouver sur les étageres des ménagères et chefs amateurs.
