Better than most cook books. I tried several of the instant pot recipes and will probably use one or two more as well as a couple of the air fryer recipes. The slow cooker and skillet sections were either uninteresting or things I already make reasonably well.
Of course there are tips in Skinnytaste Meal Prep: Healthy Make-Ahead Meals and Freezer Recipes to Simplify Your Life: A Cookbook for how to get ahead of the game in the kitchen when you’ve got a busy schedule. But as always with the Skinnytaste cookbooks, the real treasure comes with the slew of recipes with plenty of taste despite fewer calories.

I adored Gina Homolka’s previous cookbook, The Skinnytaste Cookbook: Light on Calories, Big on Flavor, in which she magically converted show more delicious — but calorie-laden — dishes into low-calorie recipes. And, unlike in The Skinnytaste Cookbook, this one has some recipes for those looking to cut carbohydrates as well as, or instead of, calories. Cooks, rejoice! Homolka has done it again! show less
The concept for this book is recipes that only use one appliance or cooking style per recipe, which streamlines the cooking process. For instance using only a crock-pot, sheet pan, dutch oven, instant pot, etc. I had heard good things about this book, so checked it out of the library to see for myself. I don't own all the appliances, so just read the sections that I would be most likely to use. What made the recipes worthwhile was the concern for healthy eating - less fat, less carbs, more show more fresh vegetables - and nutritional info provided for each recipe. A real plus is almost every recipe is accompanied by a beautiful color photo. I would be motivated to make a few of the recipes, but not enough to warrant buying the book. show less
Gina Homolka does the impossible: She takes delicious — but calorie-laden — dishes like Eggs Benedict, baked potato soup, Panzanella Salad, Chicken Parmesan, French silk pie, and much, much more and remakes them into low-cal recipes. Are the recipes always as scrumptious as the calorific originals? Not always, but they’re usually pretty good, and sometimes you really can’t tell that Homolka has shaved hundreds of calories off.
