The Sum of All Men was the first in a pretty good series. Also Into the Forge and Into the Fire were a pretty good, though somewhat Tolkien-derivative, duo. The Dragonbone Chair is also the start of a really good trilogy by Tad Williams.

Fortress in the Eye of time start of a very good series.

Master of whitestorm, To ride hell's chasm two excellant standalone books

The innocent mage debut from a new australian author, very good.

Wizard of earthsea another classic.

Anything by Stephen donaldson Mirror of her dreams is perhaps his most accessable fantasy, but they're all good.

All of these are fairly dense in a JRR Tolkein like way.

Forging the Darksword by Margaret Weis is the first in a trilogy (with a fourth book afterward) of very well-developed fantasy books.

Tigana by Guy Gavriel Kay? Storm Front, the first of the Dresden series, by Jim Butcher?

I'm about halfway through The Golden Compass to get ready for the movie this winter. It's a pretty good read, but not so much high fantasy with elves and dwarves and such as LoTR or The Wheel of Time.

I'd say the His Dark Materials series (agreeing with #8), or A Game of Thrones, the first in the Song of Ice and Fire series.

The above mentioned Tad Williams series is very good.

How about Dragon Wing which is the start of the Death Gate cycle (there are 7)? Its been a while since I read the series, but I remember liking it a lot.

I just read Jonathan Strange and Mr. Norrell by Susanna Clarke and liked it a lot. It's different from any other fantasy novel I know, but it's epic, exciting and very well written.

Song of Fire and Ice Series by George R R Martin

It's as epic as Jordan's but better. The best fantasy series I've read so far.
