Part of the “Easy Menu Ethnic Cookbook” series for ages 9-12, Cheryl Davidson Kaufman begins with an introduction to the region, with a map and brief descriptions of land, history, food, holidays, and festivals. Safety guidelines and descriptions of cooking utensils and terms and special ingredients follow, as well as healthy cooking tips and a metric conversion chart. Sample menus are provided as well as 21 recipes with interesting side comments for soups, stews, main and side dishes, desserts, and holiday/festival food. Indexed and full of colorful photographs, the book would be useful to learn more about Caribbean culture and food. ( )
