I preferred older editions which had more thorough explanations. It's still valuable, being an update version of my edition from 17yrs ago, but the wording is also more vague or generic and I don't like that. I hope more current editions are better. This leaves room to be desired.
I was once a mixologist: for seven days. It wasn't that I didn't like mixing cocktails, I did. What I didn't like was working in a restaurant. Well, I haven't read every word yet. I'm working my way through and learning a lot, and looking things up every now and then. If you don't already have a degree from the Cordon Bleu or the CIA, you probably can use this book to find out about unusual ingredients (and even learn new things about common foods.) Highly recommended.
