Thanks Matt! Just bit into the fresh lightly salted mozzarella my local Italian shop makes daily. Though I've been going through an aged cheese phase recently...

One of the joys of having given up carbs is that I can eat whatever cheese I want with seeming impunity!

So, it was smoked cheese!! I think they use a different tool for smoking cheese today.
