My home of Sacramento, California has such a wealth of wonderful Southeast Asian cultures and restaurants, including author Mai Pham's Lemon Grass, that I have never before felt the need to master Vietnamese cooking at home. However, over time my love affair with the wonderful, rich Vietnamese noodle soup Pho prompted me to buy Pham's book and attempt the elixir myself. Starting with beef knuckle bones, chuck, star anise and ginger, this savory broth (page 54) must simmer for hours, tastes like heaven and is well worth both the price of the book and the effort involved.
